Sweet Corn Spinach Kebab Recipe – A Healthy and Flavorful Vegetarian Delight

Introduction: Sweet Corn and Spinach Kebabs offer a deliciously healthy alternative to traditional meat kebabs. Packed with the goodness of fresh spinach, sweet corn, and aromatic spices, these kebabs are crispy on the outside, tender on the inside, and full of vibrant flavors. Whether you’re looking for a light snack, a healthy appetizer, or a plant-based main dish, this recipe will delight your taste buds and add a colorful twist to your meal!

Ingredients:

  • 1 cup sweet corn kernels (fresh or frozen)
  • 1 cup spinach leaves (fresh, chopped)
  • 1 medium-sized potato (boiled and mashed)
  • 1/4 cup breadcrumbs (or as needed)
  • 1 small onion (finely chopped)
  • 2-3 green chilies (finely chopped, optional)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons chopped fresh cilantro (coriander leaves)
  • 1 tablespoon lemon juice
  • 1 tablespoon oil (for binding and grilling)
  • Oil for brushing or spraying (for grilling or pan-frying)

Preparation Method:

  1. Prepare the Ingredients:
    • If you’re using frozen sweet corn, cook it until soft and tender. Drain any excess water.
    • Heat a pan and lightly sauté the chopped spinach until wilted. Allow it to cool, then squeeze out any excess water. Chop it finely.
    • Mash the boiled potato until smooth. This acts as a binding agent in the kebabs.
  2. Mix the Kebab Dough:
    • In a large mixing bowl, combine the sweet corn, sautéed spinach, mashed potato, and finely chopped onions.
    • Add the green chilies, spices (cumin powder, coriander powder, garam masala, turmeric powder, red chili powder), salt, pepper, and lemon juice.
    • Mix in the breadcrumbs little by little, adjusting the quantity until the mixture holds together well and is not too sticky. Add the chopped cilantro for a fresh flavor.
  3. Shape the Kebabs:
    • Take small portions of the mixture and shape them into round or oval patties or skewers, depending on your preference. If you’re using skewers, ensure the mixture sticks well to the skewers.
    • You can refrigerate the kebabs for about 15-20 minutes before cooking to help them firm up.
