Ingredients:

  • 4 lobster tails, thawed (if frozen)
  • 8 large scallops, cleaned and patted dry
  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme, chopped (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)
  • Lemon wedges (for serving)

Preparation Method:

  1. Prepare the Lobster Tails:
    • Start by preparing the lobster tails. Using kitchen scissors or a sharp knife, cut down the center of the lobster shell lengthwise. Gently pull the lobster meat out of the shell, leaving the base attached at the tail. You can either rest the lobster meat on top of the shell or remove it entirely, depending on your preference.
    • Use a small knife to make a shallow slit along the top of the lobster meat (this will help the heat cook the lobster evenly).
    • Brush the lobster meat with 2 tablespoons of melted butter, then sprinkle with salt, pepper, and half of the lemon zest.
  2. Sear the Scallops:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Pat the scallops dry with a paper towel to remove any moisture, then season them with salt and pepper.
    • Once the pan is hot, add the scallops and sear them for 2-3 minutes on each side until they are golden brown and cooked through. Remove from the pan and set aside.
