Introduction

Ingredients:

  • For the strawberry base:
    • 500 g fresh strawberries, hulled and chopped
    • 1/2 cup (100 g) granulated sugar
    • 1 tablespoon lemon juice (optional, for enhanced flavor)
  • For the vanilla bean base:
    • 2 cups (480 ml) heavy cream
    • 1 cup (240 ml) whole milk
    • 3/4 cup (150 g) granulated sugar
    • 1 vanilla bean (or 1 tablespoon pure vanilla extract)
    • 4 large egg yolks

Instructions:

1. Prepare the Strawberry Puree:

  • In a medium saucepan, combine the chopped strawberries and 1/2 cup sugar. Heat over medium heat, stirring occasionally, until the strawberries begin to break down and release their juices, about 5-7 minutes.
  • Once the strawberries are softened, use a potato masher or immersion blender to puree the mixture until smooth. If you prefer a chunkier texture, you can leave some bits of fruit intact.
  • Stir in the lemon juice, then let the strawberry mixture cool completely. Set aside.
