 Ingredients:

  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg (optional)
  • 1/4 cup (30g) grated Parmesan cheese
  • 1/4 cup (30g) all-purpose flour (for binding)

For the Filling:

  • 200g (7 oz) cooked ham, chopped (or substitute with chicken, beef, or vegetables for a different flavor)
  • 200g (7 oz) mozzarella cheese, grated (or another melting cheese like cheddar or provolone)
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped (optional, for added flavor)

For Frying:

  • Vegetable oil (for deep frying)
  • 1/2 cup (60g) all-purpose flour (for coating)
  • 1 egg (beaten, for egg wash)
  • 1/2 cup (60g) breadcrumbs (for coating)

 Preparation Method:

  1. Prepare the Aipim Dough:
    • Start by boiling the aipim (cassava) until it becomes soft and tender (approximately 20-25 minutes). Once cooked, drain and let it cool slightly before mashing it thoroughly.
    • In a large bowl, combine the mashed aipim with the butter, milk, egg, salt, pepper, and nutmeg (if using). Mix well until the dough is smooth and creamy.
    • Add the grated Parmesan cheese and flour to the dough, stirring until everything is well incorporated and the mixture is firm but pliable. If the dough feels too sticky, add a little more flour.
  2. Prepare the Filling:
